    Chicken Salad

    3/4 c. fat-free sour cream
    3 scallions, minced
    1 T. finely chopped parsley
    1/2 tsp. grated lemon peel
    Salt
    Ground Black pepper
    3 cups shredded cooked chicken breast
    8 large leaves lettuce

    In a medium bowl, combine the sour cream, scallions, parsley, lemon peel, and salt and pepper to taste. Toss well to blend. Add the chicken and toss to coat. Serve on a bed of lettuce leaves.
    Makes 4 servings

    Per serving: 234 calories, 5 g. fat, 1 g saturated fat, 35 g protein, 11 g carboyhdrate, 2 g dietary fiber, 94 mg cholesterol, 127 mg sodium
