Stuffed Pasta shells
Diabetic exchange 3 shells =1bread/starch, 1½ meat,1 vegetable
List of Ingredients
1 box jumbo Shells (about 42-44 shells)
2 cups shredded low-fat mozzarella cheese
1-24 oz. carton low-fat cottage cheese
1/4 cup egg beaters
1 tsp. Italian seasoning
pepper to taste
1 quart jar plain spaghetti sauce
Cook shells according to pkg. directions.
Mix next four ingredients together.Spoon into shells, layer into baking dished sprayed with cooking spray.Pour spaghtti sauce over the shells. Bake at 350º 30 mins or until bubbly.
* note. To this recipe you could add 1 10oz.chopped frozen spinach thawed and drainedadding 1 vegetable exchange.
