The American Heart Association's Spicy Grilled Chicken:
Serves 6
1 small onion,finely chopped
2-3 T.fresh lime juice(1-2 medium limes)
1 1/2 T.extra virgin olive oil
1-2 T.finely chopped fresh cilantro leaves
1 small garlic clove,crushed or 1/4 tsp.bottled minced garlic
1/2 tsp.chili powder
Freshly ground black pepper,to taste
6 boneless,skinless chicken breast halves,about 4 oz.each,trimmed of all visible fat
In an airtight plastic bag,combine all ingredients,except chicken.
Rinse chicken & pat dry w/paper towels.Place chicken in the bag w/the marinade & turn to coat.Seal & refrigerate for 2-3 hours,turning occasionally to distribute the marinade.
Preheat an outdoor grill to medium-high heat or preheat the broiler.Grill or broil the chicken about 6" from the heat till no longer pink in the center,6-7 minutes on eacg side.
