    Blueberry Bars:
    Makes 8-10 bars

    1/2 c.nonhydrogenated margarine,softened
    3/4 c.unrefined cane sugar
    1 3/4 c.unbleached white or whole wheat flour
    1/2 tsp.baking soda
    1/4 tsp.salt
    1 c.rolled oats
    1/2 c.fruit juice(Any kind except citrus)
    1 pint blueberries
    1 tsp.vanilla
    1 T.white or brown rice flour

    Preheat oven to 375 degrees F.

    Combine the margarine & sugar in a small bowl.Sift together the wheat flour,baking soda & salt.Add the sugar & margarine,mix well.Add the oats,mixing them in w/your hands.The mixture should be crumbly but hold together when squeezed.

    For the crust,spread two-thirds of the oat mixture on the bottom of an 8" square baking pan,pressing it down firmly.Set aside the remaining oat mixture.Bake the crust for about 20 minutes,or till it is set.

    While the crust is baking,heat the juice gently in a medium saucepan.Add the blueberries & vanilla,cook for about 10 minutes or till the berries break down.Sprinkle in the rice flour,stirring constantly till the mixture thickens.

    Spread the blueberry mixture over the crust & sprinkle the reserved oat mixture on top.Bake for about 10 minutes or till the topping starts to brown.
