  • Peach delight

Not sure where I got this recipe from - but its a keeper - the recipe can be amended with various fruit and puddings -

    Peach Delight -
1 Angel food cake cut into 1 inch cubes
    1 container cool whip
1 large box vanilla instant pudding
    1 large can sliced peaches
    3 c milk

Note that the milk, pudding and cool whip can all be light or fat free

Slice each peach slice into thirds, prepare pudding as directed then add half the container of cool whip - reserve remaining cool whip for topping - chill. Place 1/3 of the cake cubes in bottom of large bowl, add 1/3 of the peaches and 1/3 of the pudding mixture, continue layering til complete, top with remaining cool whip and refrigerate 24 hours before serving.

    Enjoy

I've done one like this and made sugar free pudding, and fresh peaches for my DH to take to work, even the non-diabetics loved it!! The one I have calls for a box of rasberry jello to make up and pour over angelfood cake, then the pudding, I used strawberry jello instead, Thanks for reminding me about it.
