  • Reuben-Like Meatloaf

    I've made this a few times and its a good change of pace from the normal meatloaf.
    Mustard does come across as kind of strong to our tastes, so I halve that.



    Reuben-Like Meatloaf



    Ingredients
    1 egg
    1 tablespoon ketchup
    2 cups soft breadcrumbs
    1 teaspoon salt
    2 lbs lean ground beef
    4 ounces deli pastrami, chopped
    1 (8 ounce) can sauerkraut, rinsed and drained
    1 cup shredded swiss cheese
    1/4 cup sour cream
    1 tablespoon prepared mustard


    Directions
    In a large bowl, combine the egg,ketchup, bread crumbs, and salt.
    Crumble the beef over the mixture and mix well;set aside.
    In a bowl,combine pastrami, sauerkraut,cheese, sour cream and mustard.
    Press a third of the mixture into a greased 9x5x3 inch loaf pan.
    Top with half of pastrami mixture.
    Repeat layers.
    Top with remaining beef mixture.
    Cover and bake at 350 degrees for 1 hour or until meat is no longer pink;drain.
    Let stand 10 minutes before slicing.

    This sounds yummy! I think I am going to have to try this (even though I have been told I am not allowed to make meatloaf again - LOL)

        Shel..did you mean beef truck drivers? I don't see truck drivers driving around with a bunch of beets. lol


        Oops!I forgot you were farmers! You did mean beets! Sorry,I thought you had a typo.
        I was thinking beef as in the hamburger in the recipe would be good for the beef truck drivers.

          YEP I DID MEAN BEET, AS IN SUGAR BEETS--WE GROW 180 ACREA OF THE SUCKERS

            I'd use the rest of the mustard in the meat mixture
