  • Marinated Cheese

    I've make this recipe for about 10 years. Its always a hit at parties:


    MARINATED CHEESE


    ½ CUP OLIVE OIL
    ½ CUP RED WINE VINEGAR
    3 CLOVES CHOPPED GARLIC
    ½ CUP CHOPPED GREEN ONIONS
    3 TBSP. FRESH OR DRIED PARSLEY
    3/4 TBSP. FRESH OR DRIED BASIL
    1 TBSP GRANULATED SUGAR
    ½ TSP. SALT
    ½ TSP. PEPPER
    1 8 OZ. CUBED CHEDDAR CHEESE OR COLBY
    JACK
    1 8 OZ. CUBED CREAM CHEESE



    DIRECTIONS:


    • In a jar with a lid, place the first 9 ingredients and shake.
    • In pan or dish alternate cheese cubes.
    • Pour over mixture from jar.
    • Refrigerate for approx 8 hours.
    • Serve.

    sounds delicious! Thanks for sharing I guess the cream cheese really needs to be chilled before cubing.

      Do you serve the cheeses in the marinade? Or take them out and put 'em on a serving plate? Sounds yummy!

        Hey Ro Ro, your recipe is pretty close to the one I make. Good stuff and great for parties.

        I have never used basil, but think I will next time.



        I got this out of one of my magazines many years ago. I add sliced jalapenos on as well.

        *This is best served after sitting out for a bit.


        SOUTHWESTERN CHEESE APPETIZER

        1/2 cup olive oil
        1/2 cup white wine vinegar
        1/4 cup fresh lime juice
        1/2 (7.5 oz.) jar roasted sweet red peppers, drained and diced
        3 green onions, minced
        3 Tablespoons chopped fresh parsley
        3 Tablespoons chopped fresh cilantro
        1 tsp. sugar
        1/2 tsp. salt
        1/2 tsp. ground pepper
        1 8 ounce block sharp cheddar cheese, chilled
        1 8 ounce block Monterey Jack cheese with jalapeno peppers, chilled
        1 8 ounce package cream cheese, chilled

        Wisk first 3 ingredients until mixture is blended. Stir in diced red peppers with next 6 ingredients. Cut block of cheddar cheese in half lengthwise. Cut halves crosswise into 1/4 inch thick slices repeat with Monterey Jack cheese and cream cheese. Arrange cheese slices alternately in a shallow baking dish. Standing slice on edge. Pour marinade over cheesed, cover and chill 8 hours. Transfer cheese to a serving plate and spoon remaining marinade over top. Serve with assorted crackers... ENJOY!

          Luvs, yes you marinate the cheeses in the marinade mixture.

          Bean - yours sounds yummy too.

          Bj - if I have the time, I put the cream cheese in the freezer for about 10 minutes before cubing.

              Yea, I got that the cheese marinates in the marinade... but when you serve it, do you take the cheese out of the marinade and put it on a plate w/ toothpicks or something, or do you serve it in the dish w/ the marinade?

                  Luvs, no I don't take out the cheese from the marinade. I find people like to slosh the cheese around the marinade to try to get a little extra on it.

                    hey Ro, how do you think using a mozza cheese rather then cream cheese would be. I only imagine that the cream cheese would get really mushy and fall apart. Thanks, Beth

                      Bj - I'm sure that would work too. I've never ventured out with other cheeses. Maybe a pepperjack against that marinade would be good too.

                        we are having a potluck baby shower at work on sat.........so i sit here pondering......whose cheese i want to take.....ro's or beans.........ro's or beans.....hard decision! lol.

                          My girlfriend has a recipe like this one, and she uses fresh Mozarella cheese, very good.
