  • Maryland oyster stew

    1 pint of shucked oysters with their liquor
    1/3rd to 1/2 stick of butter
    1 quart half/half*
    S&P to taste
    Chopped fresh parsley
    Oyster crackers

    Melt butter in a saucepan and add the oysters and their liquor. Bring up to a bare simmer. Slowly add half and half and simmer just until the edges of the oysters curl.
    Season to taste. Add chopped parsley just prior to serving.

    Serve with oyster crackers.

    Some prefer to use equal parts of whole milk and half/half.
