1 2b round of Dark Pumpernickel Bread
4 packages of Corned Beef (the cheap packets in the Lunch meat section, or 1/3 lb at the Deli sliced thin)
1 1/2 C Sour Cream
1/2 C Mayo
2 tsp Dill Weed
2 tsp Parsley
1 Tbs Minced Onion
Salt and pepper to taste
Please keep in mind I do not normally measure, so if an amount does not seem right to you, just tweak it the way you want it.
Cut off the top of the Pumpernickel, scoop out the insides, saving all the bread pieces for dipping. Chop up the Corned Beef. Mix all ingredients together in a separate bowl and chill for a little while so the flavors can blend. Just before serving, put dip in bread bowl. Fritos are also really good with this dip also...
