  • Mexican Snack Squares

    These have been a favorite for years! Finally got around to snapping a couple pics.

    Mexican Snack Squares

    2 (8 count each) cans crescent rolls

    1 (16 oz) can refried beans

    1 cup sour cream

    1 can diced green chiles

    2 tablespoons taco seasoning mix (from 1 1/4 oz package)

    1 1/2 to 2 cups shredded cheddar cheese

    1/2 cup sliced green onions

    1/2 cup chopped green pepper

    3 jalapenos, chopped

    1 cup seeded, chopped tomato

    1/2 cup sliced ripe olives

    Separate dough into 4 long rectangles and place crosswise in ungreased jelly roll pan. Press over bottom and 1 inch up sides to form crust. Firmly press perforations to seal. Bake at 375ļ for 14 - 19 minutes or until golden brown. Cool completely.

    Spread beans over crust to within 1/2 inch of edges. Combine sour cream, green chiles and taco seasoning, mix well. Spread sour cream mixture over beans. Sprinkle with cheese, onions, green pepper, jalapenos, tomatoes, and olives evenly over sour cream mixture. Cover and refrigerate at least 1 hour. Cut into squares. Serve with salsa and/or taco sauce.

    I just used a 1/2 sheet pan and 1 crescent roll last night, I didnít have green pepper but fresh jalapenos from my garden. I also topped the servings with fresh cilantro and more hot sauce.

    I like using the flavored refried beans, last night I used chipotle and also added pickled jalapenos to the sour cream mix for more zip.

    You can really add or take away what you like in this recipe.

        Hey Nu! You could always add seasoned taco meat and top with shredded lettuce (make a meal out of it)!

              This is similar to what ya'll are talking about.

              Alpo

              1 lb. browned hamburger
              taco seasoning
              1 cup diced onion or more
              7 oz can green chiles
              1 cup taco sauce or salsa
              2 - 15 oz cans refried beans
              1 or 2 cups grated sharp Cheddar cheese
              1 small carton sour cream, optional
              shredded lettuce, optional

              Preheat oven to 350 F. Brown ground meat and drain. Put meat back in pot and saute onions until clear. Prepare meat and onions with taco seasoning per the package directions. Add all other ingredients to pot except cheese. Simmer until heated through. Pour meat and bean mixture into 9 x 13 inch pan. Add cheese to top. Cook 15 minutes or until cheese is bubbly.

              Note: Use sour cream on the side. Also extra taco sauce or salsa is good on the side. Use taco chips to dip. Serve with green salad and maybe gualamole. It is also good in a beef and bean taco with the fixings..

                Bean, I make this except use the seasoned taco meat like you were talking about and omit the beans altogether and it's very yummy. I serve it for dinner sometimes. Yours looks awesome too, though!

                    Damar12 - whoever heard of sour cream being optional LOL. If it is mentioned in the recipe, as far as I'm concerned it is IN the recipe.

                            Made these today for a church luncheon. Came home with one teeny jalapeno slice left on the pan.
