Skillet Tomatoes and Zucchini
2-T. butter
2-small zucchini, sliced
1-medium onion, sliced
2-medium tomatoes, sliced
1/2 tsp. garlic salt
1/4 tsp. basil leaves
Fresh ground pepper
1-cup shredded mozzarella or cheddar cheese
1-cup seasoned croutons
In 10" covered saute pan, melt butter.
Add zucchini and onion.
Saute over medium heat till zucchini begins to tender.
Add Tomatoes and seasonings
Cover and cook for 3-5 minutes or until tomatoes are tender.
Remove from heat and sprinkle with cheese and croutons.
Cover and let stand 2-3 minutes or until cheese melts.
