  • Collard Greens

These were delicious. I made some slight changes which you will see. My family were kind of fighting on how much there were able to take home!

    COLLARD GREEN’S
BY GINA NEELEY - FROM DOWN HOME W/ THE
    NEELEY’S ON FOOD NETWORK

    5 bundles collard greens ( I used 3 large pre-washed bags)
    3 cups salted water
    3 large smoked ham hocks
1 cup sugar ( I used ˝ cup and next time I’ll use 1/4 cup)
3 tablespoons crushed red pepper flakes ( I used 1 Tblsp.)

Thoroughly wash collard greens, be sure to pull leaves apart and remove any
sand. In a medium saucepan, bring 3 cups of salted water to a simmer. Place
smoked ham hocks in salted water and cover. Cook ham hocks until slightly
tender and remove from pan. In the same saucepan, add collard greens and
remaining ingredients. Cover and cook greens for 2 1/2 to 3 hours until water
reduces, add more water and additional salt and sugar, to taste.

Greens are a part of my family history...lol! I remember Mom seeing them growing wild on the side of the road when I was a little girl. She would have Daddy pull over so she could stop & pick them. I love Mustard greens. I'm not one bit picky. I will eat just about any variety. I think the secret lies in the Ham hocks and a little sugar. It SOUL FOOD for sure!

You only need a little! I put a little sugar in cabbage and in carrots too. It just makes them sooooo tasty.

would much rather have a collard over a mustard or a turnip green!
