These were delicious. I made some slight changes which you will see. My family were kind of fighting on how much there were able to take home!
COLLARD GREEN’S
BY GINA NEELEY - FROM DOWN HOME W/ THE
NEELEY’S ON FOOD NETWORK
5 bundles collard greens ( I used 3 large pre-washed bags)
3 cups salted water
3 large smoked ham hocks
1 cup sugar ( I used ½ cup and next time I’ll use 1/4 cup)
3 tablespoons crushed red pepper flakes ( I used 1 Tblsp.)
Thoroughly wash collard greens, be sure to pull leaves apart and remove any
sand. In a medium saucepan, bring 3 cups of salted water to a simmer. Place
smoked ham hocks in salted water and cover. Cook ham hocks until slightly
tender and remove from pan. In the same saucepan, add collard greens and
remaining ingredients. Cover and cook greens for 2 1/2 to 3 hours until water
reduces, add more water and additional salt and sugar, to taste.
