Sonoma jack potatoes
diced 1/2 inch thick boiled fork tender baking potatoes (desired amount to fit in you dish)
jack & cheddar cheese shredded (as much as you want.. 1/4 C)
1T butter
pesto 1/4 C
salt and pepper
place boiled potatoes mixed with alittle cheese and butter in a baking dish (indivual size) sprinkle salt and pepper to taste add a bit more cheese on top bake at 350 until cheese is browned and bubbly
take out of the oven put and add a generous amount of warmed pesto on top
enjoy right away!
