  • Green Tomato Pasta

    I always make a double batch, this is rich but is so good.

    Green Tomato Pasta

    Serving Size : 2 Preparation Time :0:00
    Categories : Pasta

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 cup bow tie pasta ( I use the tiny bow tie pasta)
    2 cloves garlic -- minced
    1 Tablespoon olive oil
    2 medium green tomatoes -- coarsely chopped
    1 cup whipping cream
    2 Tablespoons fresh parsley -- chopped
    1/4 teaspoon pepper
    1/3 cup parmesan cheese -- finely shredded
    1 ounce prosciutto -- thinly sliced

    Cook pasta according to directions on package. Drain, keep warm.

    In large skillet, cook garlic in oil 30 seconds. Add green tomatoes and cook 3-4 minutes stirring often. Stir in whipping cream, parsley and pepper. Cook 5-8 minutes or until slightly thickened. Remove from heat. Stir in 1/3 cup parmesan cheese and prosciutto. Serve over pasta. Top with extra parmesan cheese.

    Oh MY Goodness SusieRae...this sounds soo good. Wish we had some homegrown right about now...tomatoes of course...This sounds yum mee! Thank-you so much for sharing...

      I saw a big bin full of cheap, green tomatoes at my local produce store today & couldn't figure out what I could do with them. DH hates fried green tomatoes. I'm betting he's gonna love this recipe.....thanks a million, susanrae!
