Swedish Salmon Fried Cakes with Cheese Sauce
1 lb can Salmon
1 dash Cayenne Pepper
1 TBS Lemon Juice
2 TBS finely chopped Green Onion with tops
2 TBS finely chopped Green Pepper
2 TBS finely chopped Fresh Parsley
1/2 stalk minced Celery
1/2 tsp dried Dillweed
2 cups Bisquick or your favorite biscuit mix
1 Egg, lightly beaten
Light Cream or Half & Half
Oil for Deep Frying
Cheese Sauce (see recipe below)
DIRECTIONS: Drain salmon liquid into a measuring cup and add light cream or half & half to measure 2/3 cups of liquid. In a mixing bowl combine biscuit mix,cayenne pepper,egg, salmon/cream liquid, and lemon juice. Flake and stir in salmon. Stir in onions, green pepper, parsley, celery & dillweed. Mix well. In a deep skillet, heat about 1 inch oil to 365-degrees. Drop salmon mixture by tsp into oil for about 2 to 3 minutes and fry until cakes are golden. Drain on absorbent paper towels and serve hot with cheese sauce.
Cheese Sauce
1 TBS Butter
1 TBS Flour
3/4 cup Milk
1/4 cup Heavy Cream
1/4 tsp Nutmeg
3/4 cups grated Mild Cheese
1/4 tsp Cayenne
Salt & Pepper
DIRECTIONS: Melt butter in 1 quart saucepan,stir in flour. Gradually add milk, stir until sauce slightly thickens. Stirring constantly, add cream, salt, pepper, nutmeg, and cayenne. Cook for 5 minutes. Remove from heat and stir in cheese. Top over Swedish Salmon Fried Cakes
