  • Saurkraut Balls

These are so good, we just made 450 this weekend.
    This recipe makes about 150

2 1/2 lbs sausage (I use Bob Evens)
    3/4 cup chopped onion

    brown and drain

    2 8oz cream cheese
    1 1/4 teaspoon garlic powder
    1 1/4 teaspoon pepper
    10 tablespoon bread crumbs

    mix together and add sausage

    2 32oz bags of saurkraut

chop and drain and squeeze out as much liquid as you can
add to mixture and refrigerate overnight

    roll into walnut size balls
    dredge in flour
    into egg and milk wash
    then bread crumbs

    deep fry until golden brown

Keep in the freezer and heat in a 350 oven until hot (about 10 mins)

Never heard of such a thing! Sounds good, but lots of work.......would probably be fun to work on with a group, tho.

                  Re: Saurkraut Balls

I don't post here very often but I LOVE these little treasures. I get so frustrated preparing them because they as so easy to fall apart. Any tips when you are frying them?

                    Re: Saurkraut Balls

The tip I have is to keep the mixture cold and make sure the ball are firmly packed and if they start falling apart refrigerate again before frying
It is a lot more fun doin it as a group. we've had 5 or 6 friends over and made as many as 2000. Everyone had one job and we would switch every 1/2 hr or so.

Family can't do holidays here in Kentucky without sauerkraut balls, they request them at christmas time. I have also made it like a dip, you mix everything together and keep at room temp., & dip with crackers. (I like using triskit's (sorry about the spelling)

Thanks for the tip! I've tried about everything so maybe after forming the little buggers into balls I'll pop them in the fridge for a bit. I wonder if these could be baked?

                              I want to try these.
Never had sauerkraut in a bag? I guess since you drain it anyway you could use 32 oz can or jar?
Have you made time to listen to the birds today........
