    Peanut Butter Pie

    1 Baked Pie Crust
    1/2 cup creamy peanut butter
    2/3 cup sugar
    2 cups scalded milk
    2 TBS butter
    1/4 tsp salt
    1 cup powdered sugar
    1/4 cup corn starch
    3 egg yolks, beaten
    1 tsp vanilla
    MERINGUE:
    3 egg whites
    6 TBS sugar

    Mix peanut butter & powdered sugar together until crumbly & pea-sized. Reserve 2 TBS of this mixture and set aside for topping the meringue.
    Spread the remaining mixture into the bottom of the pie shell.
    Combine cornstarch, sugar, and salt into a large saucepan. Add milk and egg yolks. Cook over medium heat until thick. Remove from heat and add butter and vanilla. Pour into pie shell.
    Meringue; Beat egg yolks until very stiff. Add sugar gradually and continue beating at high speed until sugar is dissolved. Top pie mixture with the meringue and sprinkle the top of meringue with the reserved 2 TBS Peanut Butter/Powdered Sugar.
    Bake in 350 degree pre-heated oven until golden brown.
    This is by far my VERY favorite Peanut Butter Pie Recipe and I hope you all love it too!!

    This is fantastic! I make it using vanilla cooked pudding but otherwise it is the same! I also found this pie at an Amish restaurantr--it is really good!!!!!!!!!!!!!!

      Nommie, did you substitute something for the pudding? Did you make the pudding as directed and then add to the mix?

        Ro-Ro,
        Just this morning under the DESSERTS section, I saw a recipe for Amish Peanut Butter Pie, and they made it in a similar fashion, but used instant pudding,( instead of cooking the filling). They were basically the same pie except for the amount crumbs that you put into the shell ....
        The Amish recipe would save you a heap of time. I will try & bump it for you

          I plan on making your Mom's recipe at Thanksgiving. I was courious about he pudding.

            Basically, the filling part, where you put the cornstarch, etc--I made up the vanilla pudding. I have a cookbook that has the recipe using the pudding.
