  • Pear Cinnamon Streusel Squares

    Now that its getting close to the holidays, you should be able to find the cinnamon baking chips. The kind I used was from Hershey and they are located by the chocolate chips in the baking aisle. This is really good! I used pears for a change of pace from other desserts I usually make.







    Pear-Cinnamon Streusel Squares


    2 cups all-purpose flour
    1 1/4 cups quick-cooking rolled oats
    3/4 cup packed brown sugar
    2 teaspoons ground cinnamon
    1 cup butter
    2 eggs
    1 cup granulated sugar
    2 tablespoons all-purpose flour
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    2 cups pears or apples, peeled and chopped
    3/4 cup cinnamon baking chips
    1 cup powdered sugar
    1 tablespoon milk

    Directions
    Preheat oven to 350 degrees F. Lightly grease a 9x13x2 inch baking pan; set aside.
    In a large mixing bowl, stir together 2 cups flour, rolled oats, brown sugar and ground cinnamon. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Remove 1 1/2 cups of the crumbs; set aside.
    Press remaining crumbs into bottom of prepared baking pan. Bake in the preheated oven for 15 minutes.
    Meanwhile, in a medium mixing bowl, beat eggs and granulated sugar with whisk until smooth. Whisk in the 2 tablespoons flour, then baking powder and salt. Stir in pears or apples and cinnamon pieces. Gently spread fruit mixture over the baked crust. Sprinkle with reserved crumb mixture.
    Bake in a 350 degree oven for 30 to 35 minutes more or until golden brown. Cool in pan on a wire rack. Cut into bars. Drizzle with powdered sugar icing.
    To make powdered sugar icing: In a small bowl stir together 1 cup sifted powdered sugar and 1 tablespoon milk. Stir in additional milk 1 teaspoon at a time, until icing is of drizzling consistency.
    Cover and store bars in refrigerator for up to 1 weeks. DO NOT FREEZE.

    Makes 32 bars

    These sound good - just hope I can find the cinnamon bits - if not possible, would regular ground cinnamon work just as well?

      I'm not sure if normal cinnamon would work. The cinnamon chips all melt together like chocolate chips do so it kind of binds the bars together.
      I always found my cinnamon chips at Super Walmarts.

        I've been looking for the chips so far no luck. I'll try Wallmart this weekend. TY
