  • Christmas Breakfast Lasagna

    1 bag frozen hash browns--the little cubed kind
    1 can cream of mushroom soup
    1/2 container sour cream
    1 diced onion
    1 lb. cooked bacon, diced
    2 cups cheddar and mozzarella cheese, grated

    In lasagna pan:
    1st layer--hash browns
    2nd layer--mix sour cream and mushroom soup together and place on top of hasbrowns
    3rd layer--onions
    4th layer--bacon
    top with cheese

    Cook in oven, covered with tin foil for approx. 1 hour @ 325. Take foil off and let cook for another 5 minutes.

        MudderBear - I'm assuming the sour cream is from a 16 oz container? Different parts of the country sell different sizes. Where I am the containers come in 8 oz, 16 oz and 32 oz.
        Clarification please on size. Thanks.

            LOL now I'm wondering what size container sour cream ....I just assumed 16oz.

                I made this today and it was really good. The family gave it a thumbs up as a keeper recipe. I used 1 8 oz container of sour cream mixed with a can of cream of chicken soup. I think next time I will put the onion on top of the potatoes rather than with the bacon. Also, I didn't have the little cubed type of potatoes but had some of those Simply Potatoes Hash browns and they worked perfectly

                Interestingly this recipe was on the hash brown package and it sounds really good. just add bacon.

                Cheese Hash Browns

                1 pkg Simply Potatoes Shredded Hash Browns
                1 can (10 3/4 oz) cream of chicken soup
                8oz Shredded Cheddar Cheese
                3/4 C sour cream
                1/4 C butter, melted
                2 TBSP chopped onion

                1. Preheat oven to 350 degrees
                2. Thoroughly combine all ingredients except the hash browns.
                3. Place hash browns in a greased 2 quart baking dish.
                4. Add mixture to hash browns and stir until well mixed.
                5. Bake at 350 degrees for 45 minutes.

                -add any variety of cream soup
                -add 1 clove minced garlic
                -add a topping
                -2 cups crushed cornflakes
                1/2 c melted butter
                mix together and sprinkle over casserole. Bake according to directions.
