  • BOURBON CHICKEN THIGHS - Pressure cooker recipe

    I made this for the first time tonight and OMG it was delicious and super simple to make.


    From Bob Warden's Great Food Fast cookbook

    1 Tbsp. olive oil
    2 pounds boneless, skinless chicken thighs
    1/2 cup chili sauce (I used Heinz)
    1/3 cup Apple juice
    3 Tbsp. Soy sauce
    1 Tbsp. Bourbon liquor (you can substitute with Apple cider vinegar)
    1 Tbsp. Light brown sugar
    1/2 tsp. onion powder
    1/4 tsp. garlic powder
    1/4 tsp. crushed red pepper (I used cayenne)
    1/4 tsp. ground ginger
    2 tsp. cornstarch mixed with 1 Tbsp. Water

    With the cooker's lid off, heat oil on HIGH or "brown" until sizzling.

    Place chicken thighs in cooker and sauté until browned.

    Add chili sauce, apple juice, soy sauce, bourbon, brown sugar, onion powder, garlic powder, crushed red pepper, and ground ginger to the cooker.

    Securely lock the pressure cooker's lid and set for 8 minutes on HIGH.

    Perform a quick release to release the cooker's pressure.

    With the lid off, set the cooker to HIGH or "brown". Stir in the cornstarch mixture and let simmer 2 minutes, until the sauce is thickened. Serve chicken thighs drizzled in the bourbon sauce.

    Serves 4.
