    Beef and rice florentine

    I copied the recipe for this dish in a book I was using for recipes over 30 years ago. The original recipe came from Minute Rice. For some reason I never made it until tonight, and I did a few tweaks to it. It really turned out great!

    BEEF AND RICE FLORENTINE

    1 lb ground beef
    1 Tbsp oil
    3/4 cup finely diced onion
    1 package (10 oz) chopped spinach, thawed
    1-1/4 cups chicken broth
    1 medium tomato, diced
    1 can (14 oz) diced tomatoes with garlic, oregano and basil
    1 tsp salt
    1/2 tsp fresh ground black pepper
    1 tsp Penzey's Roasted Garlic powder
    1 tsp oregano
    1-1/2 cups dry Minute Rice
    1/2 cup crumbled feta cheese
    Fresh grated nutmeg, 1/4 tsp (optional)
    Penzey's Ruth Ann's Muskego Street Seasoning to taste or lemon pepper (optional)

    Brown beef and onion in oil, leaving in bite sized chunks. Season with salt, pepper and garlic powder.

    Push meat mixture aside, add spinach, broth, tomatoes, salt, oregano. Break up spinach, bring to a boil.

    Stir in rice and feta cheese and sprinkle with freshly ground nutmeg to taste. Cover, remove from heat and let stand about 5-10 minutes. Stir before serving and season with Ruth Ann's seasoning as desired.

        I like the looks of this, but with basmati rice. It’s our favorite. I don’t use minute rice, haven’t in many moons.

          I rarely use it Bean, but it’s quite good in this. I prefer either basmati or brown rice too. I will say though that Minute Rice is a lifesaver on nights when you’re exhausted.
