  • Heloise’s Shrimp Dijon

    I found this recipe in a recent Ask Heloise column in the newspaper. I gave it a try and we deemed it a winner!

    HELOISE’S SHRIMP DIJON

    1/4 cup butter or margarine
    1-1/2 lb peeled, deveined shrimp
    1 medium onion, thinly sliced
    1/4 cup flour
    1-1/2 cups milk
    2 Tbsp Dijon mustard
    1/4 tsp ground nutmeg
    1/2 tsp salt
    1/8 tsp pepper
    1-6 oz package cream cheese, softened

    Melt butter or margarine in frying pan, add shrimp and onion and sauté for 3 minutes; do not brown. Sprinkle flour into the mixture while thinning with milk, a little at a time to avoid lumping. Add mustard, nutmeg, salt and pepper, and cook 3-5 minutes. Stir in cream cheese until blended; warm through but DO NOT BOIL. Serve over rice or noodles.

    Charlene’s notes: Excellent recipe! I used a 2 lb bag of shrimp and 8 oz of cream cheese and added some capers. Served it over pappardelle pasta.
