This starts as a very basic recipe but in my notes I show the additions. I’m making it with ham and pineapple in it tonight.
Zucchini Quiche
Yield 4 servings
Ingredients
4 eggs, beaten
1 med. onion, finely chopped
4 slices bacon (cooked) or 1/4 lb. ham, diced
2 zucchini, finely chopped
1 C. cheddar cheese, grated
2 rounded Tbs. self-rising flour
Directions
Preheat oven to 375 degrees. In a bowl, combine all ingredients. The mixture will be fairly thick. Grease a 9-inch quiche or pie dish. Pour the mixture into the dish and smooth over. Bake in oven for 30 minutes.
Charlene’s notes: This is surprisingly good! I used bacon, lightly sautéed the onion before adding to mix, added some salt to the eggs and to the zucchini before adding to the mix. I added 2 small chopped tomatoes (slightly larger than cherry tomatoes) and about ¼ cup half and half. Super easy and really good.
I have also added crushed pineapple and ham to this and it's wonderful!
