  • Pressure Cooker Shrimp Scampi

    I made this tonight and it was a hit! Super fast and easy and lick the plate good!

    PRESSURE COOKER SHRIMP SCAMPI

    From Bob Warden’s Slow Food Fast cookbook pg 117

    1 pound shrimp, peeled and deveined
    4 Tbsp butter or margarine
    2 Tbsp minced garlic
    3/4 cup dry white wine (I used dry Vermouth)
    1 Tbsp lemon juice
    1/4 tsp paprika
    2 tsp fresh parsley, chopped
    Salt and pepper to taste
    Shredded Parmesan, to taste
    2 Tbsp capers, optional

    Add all ingredients to pressure cooker and securely lock lid. Set the cooker to HIGH and cook for 2 minutes.

    Perform quick release to release the cooker’s pressure and safely remove lid. Salt and pepper to taste.

    Serve over linguine or your favorite pasta, topped with shredded or shave Parmesan.

    Charlene’s notes 12-22-2021: This was amazing and super easy! I added capers to it, they weren’t in the recipe and they were great. I used dry Vermouth and German egg noodles, all perfect.
