I made this tonight, it was so good with Basmati rice pilaf.

Slow Cooker Shredded Chicken in Yogurt Sauce

A super simple slow cooker recipe for shredded chicken in a tomato-yogurt-curry sauce.

cup fat-free Greek yogurt (I used full fat plain yogurt)
1 (6 ounce) can tomato paste
1 onion, chopped
4 cloves garlic
2 tablespoons curry powder (I used 4 tsp Penzeys Sweet Curry Powder)
1 tablespoon grated fresh ginger root
1  pounds skinless chicken breasts (I used boneless/skinless thighs)
salt and freshly ground black pepper to taste
1 teaspoon sriracha sauce, or to taste (Optional)
Step 1 
Combine yogurt, tomato paste, onion, garlic, curry powder, ginger, salt, and pepper in the slow cooker. Add chicken breasts and mix with yogurt sauce.

Step 2 
Cook on Low until chicken is tender and cooked through, about 8 hours. Shred with 2 forks.
We added a little sriracha sauce at the end.

Charlene’s Notes 5-17-2022: This was excellent and easy. It did need some additional salt but was otherwise perfect.
