    I made this last night, it was yummy!

    CILANTRO LIME CHICKEN

    INGREDIENTS
    2 tablespoons olive oil
    ¼ cup lime juice from 2 limes
    ½ cup chopped fresh cilantro
    1 teaspoon chili powder
    ½ teaspoon ground cumin
    ½ teaspoon garlic powder
    ½ teaspoon onion powder
    1 teaspoons kosher salt
    ¼ teaspoon ground black pepper
    4 boneless, skinless chicken breasts

    INSTRUCTIONS

    Whisk the olive oil, lime juice, cilantro, and seasonings together in a bowl.

    Place the chicken in a greased baking dish.

    Pour the marinade over the chicken. Cover the dish, and let the chicken marinate for at least 30 minutes or as long as overnight.

    Preheat oven to 425°F.
    Bake the chicken for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F. (20 minutes for boneless skinless thighs)

    NOTES

    Marinate the chicken for at least 30 minutes.

    I do not recommend using bottled lime juice, as it has a less fresh flavor.

    For a sweeter marinade, add 1 tablespoon of honey or maple syrup!

    Fully cooked chicken should be 165°F internally.

    Storage: Store cilantro lime chicken in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.

    Charlene’s notes 2-25-2023: This was excellent and easy. I marinated it for a full day and used boneless skinless thighs for it.
