Mexican Beef and Squash Casserole with Tomatoes and Cheese
Ingredients
1 pound ground beef
1 tablespoon cooking oil
3 yellow summer squash, sliced or zucchini
1 small onion, sliced
1 garlic clove, minced ( I used 4 large cloves)
1 can diced tomatoes (I used fire roasted)
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
salt and pepper to taste
3/4 cup sliced black or green ripe olives (optional)
1 cup cheddar cheese, shredded
Preparation:
Preheat oven to 400 degrees F.
Brown beef over medium heat in a large skillet. (I add salt and pepper to beef while cooking.)
Drain excess fat and set aside.
In the same skillet, heat oil and sauté squash, garlic, and onion over medium heat until tender. Add ground beef, tomatoes and olives if using, then spices, salt and pepper.
Place in ovenproof baking dish and top with cheese. Bake 15 minutes or until cheese is bubbly.
Charlene's notes 5-1-2023: I used fire roasted tomatoes, more garlic and chopped olives to this and sprinkled Trader Joe’s Chile Lime Seasoning Blend on it and it was delicious! Served with Uncle Ben’s cilantro lime rice.
